So this is far from the norm of my ‘healthier’ recipes that I post. This soup is amazingly good, but it’s really not a low calorie, no carb option. However, I was sick, feeling icky and this hit the spot! It was a hit with everyone in the house!
1/2 cup unsalted butter
3/4 cup celery – chopped fine
3/4 cup white onion, chopped fine
1/2 cup shredded carrot
Garlic Powder to taste
1/3 cup all purpose flour
3/4 cup heavy cream
3/4 cup milk
4 cups low sodium chicken broth
1/2 cup cooked chicken, diced
16oz. pkg whole wheat gnocchi
Salt and pepper to taste
Melt butter in large pan, add onions – celery-carrots-garlic and saute’ til almost soft. Add your flower to the pan and stir/mix well. Once everything is mixed well add your heavy cream, milk and chicken broth then mix. Let the mixture thicken and come to a boil, then transfer to your crock pot.
In the crock pot you’ll add your remaining ingredients (gnocchi, chicken etc.) and cook on low for about 1-2hrs.
