Chicken and Rainbow Tortellini Soup

If you read my previous posts, you’ve seen that my daughter is sick.  So what’s better than to make a quick batch of soup for her?  This soup is yummy the entire family enjoyed it, and not only was it good, but it was simple and quick as well.

Total Time: about 20 mins.

4 carrots, cut into bite-size pieces
8 cups low-sodium chicken broth (2 boxes)
8 ounces rainbow colored cheese tortellini (fresh or frozen)
1 1/2 cups shredded rotisserie chicken
1 tablespoon dried oregano


1. In a large soup pot simmer the carrots in the broth until tender.
2. Add the tortellini and simmer until tender.
3. Add the chicken and Oregano and cook, stirring occasionally, until heated through.

When serving top with some Parmesan cheese if desired.
