I’m always on the hunt for easy, ‘healthier’ recipes and I think I found my most favorite of all dessert recipes, at least for now. I’m not a huge cobbler fan, but I just LOVE this dessert, and so does the rest of my family, so much so that when I made it for my parents, my brother, who hates desserts, ate almost the entire pan!!!
24oz of frozen unsweetened mixed berries (or any of your favorite frozen fruit)
1 box of White Cake Mix (any brand)
1 Can of Diet Sprite (or any lemon/lime soda)
Place frozen fruit on the bottom of a 9×13 baking dish. Sprinkle the cake mix on top of the fruit, don’t worry about covering them all or making them mix, just sprinkle on top. SLOWLY pour your can of soda over top of the cake mix, DO NOT STIR!! You’ll notice bubbling/fizzing up of the ingredients, this is what you want so that you have a yummy crust on top rather than it being cake like.
Put your cobbler in the oven for 45-50 min at 350.
Serves about 16 (4 Points with weight watchers)
This was AMAZING!!!!! So good, not so sweet.. You can also top with lite cool whip or sugar free vanilla ice cream.
I also tried making this with frozen unsweetened strawberries instead of mix berries and it was just as yummy! The other night I made it for hubby with frozen peaches and decided to try out the sugar free cake mix, unfortunately they didn’t have white, so I figured ah, I’ll just use the yellow. Don’t do it! The white cake mix is a must, as it’s more spongy and soaks up the ‘juices’ a lot better than a yellow or chocolate cake mix would. Although the peach cobbler was really really good, it was very runny using the yellow cake mix.
