Bacon Wrapped Chicken

12 boneless chicken breasts
2 cartons (8 oz.) whipped cream cheese with onion and chives
2 T. butter
Salt to taste
12 bacon strips

Flatten chicken to 1/2 in. thick. Spread 3 T. cream cheese over each. Dot with butter and sprinkle with salt; roll up. Wrap each with a bacon strip.

Freeze uncooked.

To cook: Thaw overnight in fridge. Place seam side down in a greased pan. Bake, uncovered at 400 for 35-40 min. or until juices run clear. Broil 6 inches from the heat for 5 minutes or until bacon is crisp.

Friday Feast

Invent a new flower; give it a name and describe it.

I am really no good with flowers, so this will be totally random. The flower would be 3 colors all mixed together in some sort of way, purple, pink and white. It would look like a large already over bloomed rose, no thorns on the stems tho, and would have a very sweet smell to it. We would name it an Aria (after my youngest daughter).

Name someone whom you think has a wonderful voice.

Right now constantly on my play list is Alicia Keys and Ne-yo, I think they both have just wonderful, great voices, and can SING like no one else can.

On a scale of 1 to 10 with 10 being highest, how clean do you keep your car?

We only have 1 car, and since I don’t have a license, its my husbands car. And he keeps it at a 1, every time we have to go somewhere, I have to make sure to make it a big ordeal because I have to go out there and clean all the CRAP out of the car that he leaves in there all week.

How do you feel about poetry?

It depends on my mood, I can either love it or hate it. Mushy poems, poems that make me think way too much to understand them, aren’t my cup of tea really. I’m more into listening to some Spoken Word, rather than poetry.

What was the last person/place/thing you took a picture of?

The last person I took a picture of was my daughter Lyric, it was a picture of her outside while the girls were playing.

Easy Peanut Butter & Chocolate Eclair Dessert

This delectable, chocolatey dessert stores well and travels easily when prepared in a disposable foil pan or storage container.

Prep: 30 Min.
Total: 8 hours 30 Min (Incl. refrigerating)

1 3/4 cups cold milk
1 pkg. (4 serving size) Jell-O Vanilla Flavor Instant Pudding & Pie Filling
1/4 cup creamy peanut butter
1 Tub (8 oz.) Cool Whip Whipped Topping, Thawed
24 Honey Maid Honey Grahams
6 Squares Baker’s Semi-Sweet Baking Chocolate
3 Tbsp. butter

Pour milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 min. or until well blended. Add peanut butter; mix well. Gently stir in whipped topping. Layer one-third of the grahams and half of the pudding mixture in 13×9 – inch dish, breaking grahams as necessary to fit. Repeat layers. Top with remaining grahams.

Microwave chocolate and butter in microwaveable bowl on HIGH 2 min., stirring after 1 min. Stir until chocolate is completely melted and mixture is well blended. spread immediately over grahams.

Refrigerate at least 8 hours. Store in refrigerator.

Makes 24 servings, 1 piece each.

Variation: Prepare as directed, omitting the peanut butter.
